OCTOBER FAVORITES

We have been lucky to have had gorgeous weather here on the Cape these last few days, so it has been hard to let go of summer. However, we are slowing down and shifting into fall-cooking mode. We are stocking up on veggies and soup mixes, on teas and other botanicals to warm us up and boost immunity, and on comforting baking mixes. This transition is also made easier by the fact that October is national cookie month, and we are not ones to say “No” to a cookie or any baked goods whatsoever.

Elderberries

Sprinkles & Baking Decorations

GINGERSNAPS

¾ cup vegetable shortening*
1 cup sugar
½ tsp salt
2 tsp baking soda
1 egg
⅓ cup Lyle's golden syrup
2 tbsp molasses
2⅓ cups all purpose flour
¾ tsp mace
2 tsp ground ginger
1/2 tsp ground cloves
1 tsp cinnamon
¼ tsp freshly ground black pepper

Coating

¼ cup sugar
2 tbsp sparkling or Swedish pearl sugar (optional)
1 tsp cinnamon

yield 30 cookies, bake 11-13 min

Preheat oven to 375F.
Mix flour and all spices in a small bowl and set aside.
Place coating mixture in a rimmed shallow bowl and set aside.
Lightly grease 2 cookie sheets or line with parchment paper.
In a bowl of a stand mixer, cream together shortening and sugar, salt and baking soda.
Beat in egg until fluffy, add golden syrup and molasses, beat again until blended.
Add flour and spices, mixing until it is a smooth dough.
Using a 1 Tbsp cookie scoop, drop balls of dough into the coating mixture a few at a time, rolling to coat.
Place coated dough on cookie sheets 1-1/2" apart, until cookie sheet is filled.
Bake 11-13 minutes,. Allow to cool a few minutes to firm up before transferring to a cooling rack.

*Note: I used butter flavored Crisco as directed. Using butter doesn't allow the gingersnaps to have enough "snap"
