One 12 oz package seasons 25 lbs of meat
Fresh sausage recipe:
- 25 lbs of 85% lean pork trims
- 2-3 c distilled water
- 12.5 oz Italian sausage seasoning
Grind all lean trims through 3/8" plate. Grind again through 1/8" plate. Add seasoning package amd mix for 3-5 min until meat becomes tacky. Stuff into 32-35mm casings or 4"x20" fibrous casings. you can also make into patties or bulk.
For 1 lb of meat use 3 3/4 tsp seasoning.
Salt, spices (including fennel and pepper), sugar, monosodium glutamate, garlic powder.
