Peeled Fava Beans (Habas) are a key ingredient in Eastern Mediterranean and other ethnic cuisines. They're light yellow with an earthy flavor and granular texture. High in protein and fiber, fava beans can be part of healthy meals. This bean is versatile and can be roasted, stewed, pureed, and even ground for flour.
Preparation: Sort beans and rinse well. Soak 1 cup of beans in water for 4 to 6 hours. They can also be soaked overnight. Drain and place in a pot. Add fresh water and cover the beans by 2 inches. Bring to a boil and then reduce heat and simmer for 40 to 45 minutes until tender.
