Demerara Sugar is a relatively unprocessed cane sugar with a smooth, sweet taste. Due to being largely unrefined, Demerara Sugar retains a hint of natural molasses flavor, and its large, light brown crystals can be baked without melting. Demerara is a county in the Republic of Guyana, a former British colony located on the north coast of South America. Demerara sugar is so-named because it was originally produced on the colony’s sugar cane fields. Most demerara sugar production now takes place in Mauritius, an island nation in the Indian Ocean about 1,200 miles off the southeast coast of the African continent.
Demerara sugar is made from crystallized raw sugar cane juice with impurities removed. Its large, light brown crystals are the result of minimal processing, which allow for the maintenance of its natural molasses flavor. Demerara sugar will not melt or dissolve during baking, making it an excellent garnish for baked goods, where it adds a satisfying crunch and pleasant toffee flavor. It is also an excellent sweetener for coffee and tea drinks.
Demerara sugar contains minimally less sucrose than regular white sugar, and also contains trace amounts of minerals like calcium, potassium, and magnesium.
