peppercorns come from the same plant as black and white peppercorns, but are the
pepper berries that have been picked before maturity. Unlike black pepper, which
is used mostly as a flavor enhancer, green peppercorns lend a more
sophisticated, earthy, hot flavor to dishes. They work well in dishes where they
will play the lead role. Green peppercorns are great used in Mediterranean and
seafood dishes, brines, and pairings with Dijon mustard.
