Masala is a blend of hot spices that may be used to enhance various curry
dishes. It is most commonly used as part of a layering of flavors, and pairs
best with heavy, hearty dishes. Our version is different than the classic North
Indian type with cardamom. Usually a teaspoon of Garam Masala is added toward
end of cooking to bring all flavors together.
